Doogh is a milk product that is made from a combination of yogurts (with different fat percentages and specific acidity) and up to 50% drinking water, and can be flavored by adding salt and aromatic vegetable essences. If regular doogh is stored at room temperature (above 20 degrees Celsius), the process of sourness of doogh occurs quickly; however, non-carbonated doogh, which also has a mint flavor, is a heat-treated doogh without preservatives, and its sourness process is much slower. In fact, heat-treated doogh is a doogh that is re-pasteurized after completing its pasteurization process in order to eliminate microorganisms harmful to the human body.
